Recipe: Sweet Sticky Chicken

This is the most delicious way of getting flavour into chicken, it is completely scrumptious. I have used it on chicken breast, but of course it can be used to marinade other types and cuts of meat, such as chicken thighs or rump steak. Sweet, smokey and savoury at the same time, I always savour every little morsel of this.

Sweet Sticky Chicken (serves 1)

1 tbsp olive oil
½ sliced red onion
1 garlic clove, crushed
1 tsp wholegrain mustard
2 tsp brown sugar
1 tbsp Worchester sauce
1 tbsp balsamic vinegar
½ tsp smoked paprika
1 tbsp extra virgin olive oil
Salt and pepper
1 large chicken breast

1. Preheat oven to 200C. Fry the red onion and garlic in the olive oil for a few minutes to soften.
2. Put the red onion mixture, and all of the other ingredients (except the chicken) into an ovenproof bowl. Mix together well. Add the chicken breast and rub well with the mixture until totally coated.
3. Place chicken in the oven for 30 minutes. Remove and serve with a fresh side salad.
